What’s For Lunch, Mom?

Okay – I can’t be the only mom who will make a great meal for the kids… and then forget to fix something for myself too! Well, it is time to stop this nonsense – because moms (I) need to eat too :) and making this great quick meal is a perfect quick meal.

Healthy Lunch Recipe for Mom:

Shredded Taco Salad
Makes 6 servings

4 ounces shredded lettuce
3\4 cup canned black beans, rinsed and drained
2\3 cup salsa
6 tablespoons reduced-fat sour cream
3\4 cup shredded reduced-fat sharp cheddar cheese
2 ounces baked tortilla chips, crumbled

In a 9-inch glass pie pan, layer ingredients in order, starting with lettuce and ending with chips.

Total Fat 5 g
Cholesterol 15 mg
Sodium 284 mg
Total Carbohydrate 16 g
Dietary Fiber 4 g
Protein 8 g
